Sirloin Steak with Garlic Butter, Asparagus & Roasted Potatoes

A perfectly seared sirloin topped with garlic butter feels like a steakhouse dinner, but it takes just 25 minutes at home. Tender-crisp asparagus and roasted redskin potatoes cook right alongside.

Ingredients

  • 2 sirloin steaks (8 oz each)
  • 1 bunch asparagus, trimmed
  • 2 cups roasted redskin potatoes
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • Salt, pepper, garlic powder

Instructions

  1. Heat potatoes per package. Season steaks generously with salt, pepper, garlic powder.
  2. Heat cast iron skillet over high heat; sear steaks 3–4 min per side for medium.
  3. Rest steaks 5 min; top with garlic butter (mix softened butter + garlic).
  4. In same skillet, cook asparagus 3–4 min until tender-crisp.
  5. Serve steak over potatoes with asparagus.

Easy Swaps

Swap steak for flat iron or Denver cut; use sweet potato fries instead of potatoes; add garlic butter.
