- 2 flat iron steaks, sliced thin
- 1 cup green peas

Directions
- Cook fiesta rice per package.
- Season steak strips with cumin and chili powder.
- Cook steak in hot skillet 2–3 min per side; rest 3 min.
- Steam peas 3–4 min; warm tortillas 30 sec per side.
- Slice steak thin; fill tortillas with steak, onions, and a squeeze of lime.

2. NY Strip with Sautéed Spinach & Baked Potato

- 2 NY strip steaks
- 2 cups chopped spinach
- 2 baking potatoes

Directions
- Microwave potatoes 8–10 min (pierce first), flipping halfway.
- Season steaks with salt, pepper, garlic powder.
- Heat cast iron over high heat; cook steaks 3–4 min per side for medium.
- Rest steaks 5 min.
- In same pan, melt butter, add garlic and spinach; wilt 2 min. Serve alongside.

Use sirloin or flat iron for a budget option; swap baked potato for roasted potatoes; add blue cheese crumbles to spinach.
3. Beef Tenderloin Tips with Green Beans & Mac and Cheese

4. Philly Steak Bowls with Peppers & Onions over Rice

Directions
- Cook rice per package.
