1. Beef Stir-Fry with Stir-Fry Vegetables & Fried Rice

Protein: Beef Steak Strips

Vegetable: Stir-Fry Vegetables

Side: Fried Rice with Kimchi

Ingredients

  • 16 oz beef steak strips
  • 2 cups stir-fry vegetable blend
  • 2 cups fried rice with kimchi
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • 1 tsp ginger (optional)

Directions

  1. Heat fried rice per package directions.
  2. Heat sesame oil in wok or large skillet over high heat.
  3. Cook beef strips 3–4 min until browned; set aside.
  4. Stir-fry vegetables 3–4 min in same pan.
  5. Return beef, add soy sauce and garlic; toss with rice and serve.

Easy Swaps

Use tamari for GF; swap beef for chicken fajita strips; use plain steamed rice.

2. Smash Burgers with Kale Salad & Crinkle Fries

Side: Crinkle Cut French Fries

Ingredients

  • 4 quarter-pound beef patties
  • 2 cups kale, massaged with olive oil & lemon
  • 2 cups crinkle fries
  • 4 burger buns
  • 4 slices cheese
  • Condiments: ketchup, mustard, mayo, pickles
  • 1 tbsp olive oil, salt & pepper

Directions

  1. Cook fries per package at 400°F.
  2. Heat skillet or griddle over high; smash patties thin with spatula.
  3. Cook 2–3 min per side; add cheese in last 30 sec.
  4. Massage kale with olive oil, lemon juice, and a pinch of salt.
  5. Build burgers and serve with fries and kale salad.

Easy Swaps

Use GF buns; swap to Wagyu patties for premium; use lettuce wraps instead of buns.

3. Beef & Veggie Skillet with Squash & Mashed Potatoes

Protein: Bulk Ground Beef

Vegetable: Sliced Squash

Side: Red Bliss Mashed Potatoes

Ingredients

  • 1 lb ground beef
  • 2 cups sliced squash
  • 2 cups red bliss mashed potatoes
  • ½ cup diced onions
  • 1 tbsp olive oil
  • Italian seasoning, salt & pepper, garlic powder

Directions

  1. Heat mashed potatoes per package directions.
  2. Heat oil in large skillet; sauté onions 2 min.
  3. Add ground beef; cook 7–8 min, breaking up until browned. Drain fat.
  4. Add squash; cook 4–5 min until tender.
  5. Season with garlic powder, Italian seasoning, salt & pepper. Serve over mashed potatoes.

Easy Swaps

Use ground turkey or bison; swap mashed potatoes for baked potato casserole; add diced tomatoes.

4. Bison Burgers with Mixed Vegetables & Sweet Potato Fries

Ingredients

  • 3 bison burger patties
  • 2 cups mixed vegetables
  • 2 cups sweet potato fries
  • 3 burger buns
  • Condiments: mustard, mayo, tomato, lettuce
  • Salt & pepper

Directions

  1. Bake sweet potato fries per package at 400°F, 20 min.
  2. Season bison patties with salt and pepper.
  3. Cook patties in skillet over medium-high heat, 4 min per side (do not overcook — bison is lean).
  4. Steam or microwave mixed vegetables 4–5 min.
  5. Serve burgers on buns with vegetables and fries.

Easy Swaps

Use GF buns or lettuce wraps; swap bison for regular beef patties; swap fries for roasted potatoes.
