This Southern-style dinner cooks stew beef with black-eyed peas, onions, peppers, and Cajun seasoning, then spoons it all over rice. A pressure cooker gets it on the table in about 30 minutes.

Ingredients
- 1 pack stew beef
- 1½ cups black-eyed peas
- 2 cups cooked white rice
- ½ cup diced onions
- ½ cup diced peppers
- 1 tbsp olive oil
- Cajun seasoning, salt & pepper, garlic powder
Instructions
- Cook rice per package. Heat oil in a pressure cooker or Instant Pot.
- Sauté onions and peppers 3 min.
- Add stew beef; brown 5 min on all sides.
- Add black-eyed peas, 1 cup water, and Cajun seasoning.
- Pressure cook 15 min (or simmer covered 25 min). Serve over rice.
Easy Swaps
Use ground beef to reduce cook time; swap black-eyed peas for lima beans; add diced tomatoes and hot sauce.
