Sausage Night: 4 Easy Skillet Dinners

Sausage brings big flavor with almost no prep. These four skillet-friendly dinners come together in 30 minutes or less with Ellsworth Foods.

Each recipe pairs a protein, a vegetable, and a side, with simple directions and easy swaps for whatever your freezer has on hand.

1. Italian Sausage with Diced Peppers & Onions over Rice

Protein: Italian Link Sausage (sweet or hot)

Vegetable: Diced Peppers & Onions

Side: White Rice

Ingredients

  • 4 Italian link sausages
  • 1 cup diced peppers
  • ½ cup diced onions
  • 2 cups cooked white rice
  • 1 tbsp olive oil
  • Italian seasoning, salt & pepper, garlic powder

Directions

  1. Cook rice per package. Slice sausages into rounds.
  2. Heat oil in skillet over medium; cook sausage rounds 5–6 min, browning all sides.
  3. Add onions and peppers; cook 4–5 min until softened.
  4. Season with Italian seasoning and garlic powder.
  5. Serve sausage and peppers over rice.

Easy Swaps

Use turkey sausage for a lighter option; serve over pasta instead of rice; add marinara sauce.

2. Bratwurst with Sautéed Kale & Crinkle Fries

Protein: Bratwurst

Vegetable: Kale

Side: Crinkle Cut French Fries

Ingredients

  • 4 bratwurst links
  • 2 cups kale, stems removed and chopped
  • 2 cups crinkle cut fries
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • Salt, pepper, red pepper flakes
  • Mustard for serving

Directions

  1. Bake fries per package at 400°F, 18–20 min.
  2. Cook bratwurst in skillet with a little water over medium; cover 5 min, then brown 5 min.
  3. In another pan, heat oil; add garlic and kale; sauté 4–5 min until wilted.
  4. Season kale with salt, pepper, red pepper flakes.
  5. Serve brats with kale and fries, with mustard on the side.

Easy Swaps

Use turkey brats; serve in a bun or without for low-carb; swap kale for spinach; add mustard and sauerkraut.

3. Ground Pork & Veggie Fried Rice

Vegetable: Stir-Fry Vegetables

Side: Fried Rice with Kimchi

Ingredients

  • 1 pack ground pork
  • 2 cups stir-fry vegetable blend
  • 2 cups fried rice with kimchi
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 2 eggs (optional)
  • Garlic powder, ginger

Directions

  1. Heat sesame oil in wok over high heat.
  2. Cook ground pork 6–7 min, breaking up until browned. Season with garlic and ginger.
  3. Push to side; scramble eggs in same pan (if using).
  4. Add vegetables; stir-fry 3 min.
  5. Add fried rice and soy sauce; toss everything together and serve.

Easy Swaps

Use ground turkey; swap kimchi fried rice for plain fried rice; use tamari for GF.

4. Pork Sausage with Diced Peppers & Sweet Potato Casserole

  • 4 sausage patties
  • 1 cup diced peppers
  • 2 cups sweet potato casserole

Directions

  1. Heat sweet potato casserole per package directions.
  2. Cook sausage patties in skillet over medium 4–5 min per side until cooked through.
  3. In same skillet, sauté peppers 3–4 min until softened.
  4. Season peppers with salt and pepper.
  5. Plate sausage patties with peppers and sweet potato casserole.

Easy Swaps

Use turkey sausage; swap sweet potato casserole for regular mashed potatoes; add eggs for a breakfast-for-dinner vibe.
