Ingredients

For the Salmon & Vegetables

  • 4 Ellsworth Red’s Best Salmon Fillets (about 6 oz each)
  • 1 lb Ellsworth Roasted Red Potatoes
  • 1 package Ellsworth Green Beans
  • 3 tablespoons olive oil, divided
  • 1 teaspoon chili powder
  • 1 teaspoon granulated garlic
  • 1¼ teaspoons kosher salt, divided
  • ½ teaspoon black pepper, divided
  • Zest of 1 lemon

For the Creamy Garlic Lemon Sauce

  • ¼ cup sour cream or mayonnaise
  • 1–2 tablespoons fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 2 teaspoons Dijon mustard
  • 1 teaspoon minced garlic
  • A dash of salt and black pepper

Instructions

  1. Preheat the oven. Preheat your oven to 425°F and line a large sheet pan with parchment paper or lightly grease it with cooking spray.
  2. Prepare the vegetables. Spread the Ellsworth Roasted Red Potatoes and Green Beans across the sheet pan. Drizzle with about 2 tablespoons olive oil, then season with ½ teaspoon kosher salt, ¼ teaspoon black pepper, and half of the granulated garlic. Toss until evenly coated.
  3. Season the salmon. Pat the salmon fillets dry and place them on the sheet pan alongside the vegetables. Drizzle with the remaining 1 tablespoon olive oil, then season with the chili powder, remaining granulated garlic, remaining kosher salt and black pepper, and the fresh lemon zest.
  4. Bake. Bake for 10–15 minutes, or until the salmon flakes easily with a fork and reaches your preferred doneness. The potatoes should be hot and lightly browned, while the green beans remain tender with a slight bite.
  5. Make the garlic lemon sauce. While the salmon bakes, whisk together the sour cream (or mayonnaise), lemon juice, parsley, Dijon mustard, minced garlic, and a dash of salt and pepper until smooth and creamy.
  6. Finish & serve. Drizzle the garlic lemon sauce over the salmon just before serving, or serve it on the side for dipping. Garnish with extra parsley or a squeeze of fresh lemon if desired.
