One-Pan Baked Cod with Summer Vegetables

Ingredients

  • 2 Ellsworth Red’s Best Cod Fillets
  • 1 package Ellsworth Asparagus
  • 1 pint of cherry tomatoes
  • 2 small yellow squash, thinly sliced
  • 2 tablespoons olive oil
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon onion powder
  • 1 teaspoon sea salt, divided
  • Pinch of black pepper
  • 2 tablespoons salted butter
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven. Preheat your oven to 400°F and lightly grease or line a sheet pan with parchment paper for easy cleanup.
  2. Prepare the vegetables. Arrange the sliced yellow squash in an even layer on the sheet pan. Drizzle with a little olive oil and season lightly with a pinch of sea salt and black pepper. Scatter the asparagus and cherry tomatoes around the squash. Drizzle the remaining olive oil over the vegetables and season with the remaining salt.
  3. Season the cod. In a small bowl, combine the paprika, garlic powder, onion powder, and black pepper. Pat the cod fillets dry and rub the seasoning mixture evenly over both sides. Place the seasoned fillets directly on top of the squash.
  4. Bake. Bake for 25 minutes, or until the cod flakes easily with a fork and the vegetables are tender and lightly roasted.
  5. Finish & serve. Top each cod fillet with a pat of salted butter and sprinkle fresh parsley over the entire pan. Allow the butter to melt before serving. Serve immediately and enjoy every bite.
