Ingredients
- 4 tuna fillets
- 2 cups stir-fry vegetable blend
- 2 cups Thai-style red quinoa
- 2 tbsp sesame oil
- 2 tbsp soy sauce or tamari
- Sesame seeds, garlic powder, ginger
Instructions
- Cook quinoa per package.
- Season tuna with soy sauce, garlic powder, and ginger.
- Heat sesame oil in skillet over high; sear tuna 2 min per side (keep center pink).
- In another pan, stir-fry vegetables in sesame oil 4 min.
- Serve tuna over quinoa with stir-fry vegetables; top with sesame seeds.
Easy Swaps
Use mahi mahi or swordfish; swap quinoa for fried rice; add avocado and sesame seeds.
