1. Tilapia with Green Beans & Fiesta Rice

Ingredients

  • 5 tilapia fillets
  • 2 cups French cut green beans
  • 2 cups fiesta rice
  • 2 tbsp olive oil
  • Lemon pepper seasoning, garlic powder, salt & pepper

Directions

  1. Cook fiesta rice per package directions.
  2. Season tilapia with lemon pepper and garlic powder.
  3. Heat oil in skillet over medium-high; cook tilapia 3–4 min per side until flaky.
  4. Steam green beans 4–5 min; toss with butter and salt.
  5. Serve tilapia with green beans and fiesta rice.

Easy Swaps

Swap tilapia for catfish or cod; use plain white rice; add lemon-herb butter sauce.

2. Mahi Mahi with Mixed Vegetables & Fiesta Rice

  2. Season mahi mahi with cumin, garlic powder, salt, and pepper.
  3. Heat oil in skillet over medium-high; cook mahi mahi 4 min per side until flaky.
  4. Microwave or steam mixed vegetables 4–5 min.
  5. Serve mahi mahi over rice with vegetables; squeeze lime over fish.

Swap mahi mahi for snapper or grouper; use plain rice; add mango salsa or avocado.

3. Catfish with Black-Eyed Peas & Corn

  2. Heat oil in cast iron skillet over medium-high; cook catfish 4 min per side until golden.
  3. Heat black-eyed peas in saucepan with salt and butter.
  4. Heat corn in microwave or small saucepan 3 min.
  5. Serve catfish with black-eyed peas and corn with lemon wedges.

Use tilapia or cod; swap black-eyed peas for lima beans; add hot sauce for Southern flair.

4. Haddock with Asparagus and Corn & Black Bean Side

  3. Heat 1 tbsp oil in skillet over medium-high; cook haddock 3–4 min per side.
  4. In same pan, cook asparagus with remaining oil 4–5 min.
  5. Plate haddock with asparagus and corn & black bean side; add a lemon wedge.

Swap haddock for cod or tilapia; use fiesta rice instead of corn & black bean; add mango salsa.
